Bruschetta with Tomatoes & Basil
Bruschetta is an Italian midday snack made with slices of thick crusty bread
toasted over a fire and drizzled with olive oil and garlic. To make it even
more irresistible, we add tomatoes and fresh basil. The key to this recipe
is the bread. The best bruschetta is made with fresh thick-crusted country
bread.
2 medium cloves garlic, minced pinch salt
1/4 cup olive oil
3/4 cup chopped plum tomatoes
1/3 cup finely chopped fresh basil
4 thick slices of Italian, French, or sourdough bread
Serves 4
In a medium size bowl, mash the garlic and salt together with the back of
spoon or a pestle. Stir in the olive oil, tomatoes and basil.
Cut the bread into slices 1/2 inch thick. Toast them in the broiler or on
top of a grill. Spoon the olive oil and tomatoe mixture over the bread and
serve. Brushetta goes well with soup and a simple salad, or serve it with
roasted vegetables.
